Rolling since 2020.

My background is in catering kitchens, but baking was always the part I loved most. That took me to Cathal Brugha Street at TU Dublin to study pastry, and eventually to starting Rolling in the Dough.

During lockdown, I began developing my own cookie dough and sending it out by post. When a local café asked me to bake for its counter, the business took a new direction and grew from there.

Today, we’re a team of three, baking for 20 cafés and restaurants across Cavan, Meath, Louth and Dublin. I’m proud of how far we’ve come, and we still put the same care into every bake as we did with those very first orders.

Rolling in the Dough is a wholesale bakery in Virginia, Co. Cavan. It is run by Michaela Keenan, a sole trader trading as Rolling in the Dough, who is responsible for the details you give us through this website. This page explains what we do with them. What we collect

When you send a stockist enquiry: your café's name, your name, email, phone number, town or Eircode, and what you tell us about your café. When you join the brownies-by-post list: your email address. If you message us on WhatsApp: your name, number and whatever you send us.

What we use it for

To reply to your enquiry, arrange a tasting and set you up as a stockist if you'd like to go ahead. To email you when brownies by post launch, if you joined that list. To send you seasonal specials and news, only if you ticked the box to say yes.

We use your enquiry details because you asked us to get in touch, and to take the steps needed before supplying you. We use your email for news and the brownies list because you agreed to it, and you can change your mind at any time.

Who sees it

Only our small team. A few trusted services handle your details on our behalf: Google, which runs our email; WhatsApp, if you message us there; UnifyOrdering, the online system our stockists use to place orders; and the company that hosts this website. They only use your details to provide that service to us. We never sell your details or share them for anyone else's marketing.

How long we keep it

If you become a stockist, we keep your details for as long as we supply you and as long as the law requires for our accounts. If you don't, we delete your enquiry after 24 months. We keep your email on the brownies or news list until you unsubscribe.

Your rights

You can ask to see the details we hold about you, correct them, have them deleted, or stop us emailing you. Just email us. Every marketing email also has an unsubscribe link. If you're not happy with how we've handled your details, you can complain to the Data Protection Commission at dataprotection.ie.
